Strawberry-Peach Coconut Smoothie

by Chelsey Lindahl on August 21, 2011

Who doesn’t love smoothies?  They are delicious.  I’ve experimented with many a smoothie concoction in my day and have come across quite a few winning (and losing) combinations.  The latest of which is a Strawberry-Peach Coconut Smoothie.  Like Charlie Sheen (minus the drugs and goddesses) this smoothie is definitely winning.  Also unlike Charlie Sheen, this recipe is totally vegan.

To create your own and taste the goodness, combine the following ingredients (per each 12 oz. serving) in a blender or food processor:

  • 1/2 frozen banana
  • 1/2 cup frozen strawberries
  • 1/2 cup frozen peach slices
  • 1/4 cup vanilla (unsweetened) almond milk
  • 1/4 cup apple juice
  • 1 tbsp shredded coconut (I like Bob’s Red Mill coconut)
  • 1 packet Stevia (or 3 drops liquid stevia)
  • 1 tsp agave nectar

Ahhhh, refreshing.

Found your blog through Eat Yourself Skinny and I just love it. Plus, your a stevia girl, even better. I am not a fan of fake sugars so the stevia’s and raw sugars are always in my cabinets. Following along and excited to see everything you have coming!

Thank you Laura! You are soo sweet! Yes — I really don’t like artificial sugars. Stevia is the best! :)
